This coffee is fermented in "big bags" for 48 hours and then dried on the patio for 15-20 days. The large bags made of polypropylene (PP) and synthetic fibers (used for the fermentation of coffee drupes) are designed to withstand large volumes and weights.
Using this technology, the farm is able to ferment 500/1000 kg of coffee at a time. Like Otávio, many other producers use them because they give the opportunity to process large volumes without compromising quality.
