The harvest time in the region is between December and March.

This coffee is washed and was dried on a patio. The majority of coffees is the region are washed but Jalapa offers well-defined seasons which guarantees a correct fulfillment of the natural process, since, at the time that harvest happens, the region gets dry and cold, which gives a good window of time to make good naturals.
