Brazil is the largest coffee producer in the world. Regardless of the huge amount of Brazilian coffee varieties, usually there is less variation in the cup profile. Typically we can find notes of chocolate, caramel and nuts.
This happens due to the altitude. Altitude, in fact, is a crucial variable to bring the best flavors to the Arabica species. Most Brazilian coffees grow at or below 1000 meters above sea level (masl) rather than 1400+ meters above sea level were the arabica coffee commonly starts to show its best aromatics.
However, in the last period, Brazilian producers are experimenting more and more, obtaining unique and surprising cup profiles.

How do we choose the coffee? First of all we have to understand what kind of product we want to create and what target we want to reach.
